poblano and smashed bean panini

Sometimes I gripe to Forrest about the elevator in our building.  It's slow, half the time it refuses to go to the ground floor, during the morning rush it reeks of perfume and in the afternoon it smells of sweaty gym bags.  All of that said, it definitely comes in handy after a trip to the grocery store....
 So tonight I decided to cook something besides roasted veggies and coucous....

roast a poblano in the oven or on a grill and peel once it has cooled down. smash one drained can of pinto beans and dice a tomato.  heat bean mixture, tomato, shredded cheese, and a few drops of lime juice in a pan adding a small amount of your favorite salsa or hot sauce.  thinly slice the poblano and pile it all on a piece of hearty bread.  throw it in a panini press or in a pan on the stove like a grilled cheese sandwich. and the best way to enjoy this messy meal is to wash it down with a beer while watching a re-run of seinfeld :)
