Riverfront Nights and Taco Sherpa

     Saturday night we wandered out and about to Chattanooga's Riverfront Nights which is a free summer music series.  The concert stage was located nearby the aquarium in a grassy amphitheater over looking the water.  Forrest, Salvador, and I met up with an awesome couple at the show whom I'd never met but can already foresee spending lots of fun times together. 
We chatted and cheers-ed to the jams of Spoonful James and Grant Farm - both bands rawked.
    Just as we thought our night couldn't get better, we spotted the Taco Sherpa food truck parked next to the adult beverage tent.....
These guys really know how to combine Mexican + Korean flavors together and serve it as a taco or rice bowl.  You pick your protein: pork, chicken or TOFU (!!!!) and then add all sorts of toppings.  Also, Taco Sherpa caters on wheels - I love the idea of having a food truck at a wedding reception!
We went for the tacos with chips and salsa - so. good.
And their sherpa sauce I could drink by the gallon.
