Cucumber & Black-Eyed Pea Salad

     Storytelling has been canceled for tonight.  I've been working on my next article for The Local (The Local Facebook ) and I'm mentally drained and creatively challenged at the moment so it's straight to the main course. Spring has sprung and it's all over our porch, cars, and up my nose (pollen, who needs it?!!).  I decided to throw together a quick and healthy springtime salad......

Cucumber & Black-Eyed Pea Salad
1 can black-eyed peas (rinsed and drained)
red onion
feta cheese crumbles
Italian dressing
lime juice
salt / pepper
     Throw your peas in a bowl and let refrigerate.  Chop half a cucumber, some red onion, and cilantro (we love cilantro so we go waaaayyy overboard with it).  Toss the fresh veggies into the black-eyed pea bowl and sprinkle with herbs, spices, salt/pepper.  Squirt the entire mixture with lime juice and Italian dressing.  Finally, load on the feta cheese crumbles and dinner is served.  This unique salad is definitely a keeper....why?!?!  Because it took four minutes to make and it's delicious!!!!!  Give it a whirl next time you have 240 seconds to get dinner on the table.
     Salvie has one mean toy collection and he likes to distribute it all over the living room floor......
