Let's sling it in reverse....Wednesday night was a blast with our aunties. They arrived at my house around 4:30 pm and we caught up and laughed over a spread of hummus, pita, pan con tomato, cheese, olives, and wine. Forrest got home from work and we headed down the street to see Sister and David. We ended the night at RJ Saxon's with beers, more appetizers, pizza/sandwiches, and our team, Magical ATM, dominating in Wednesday Night Trivia. We hated saying goodbye to Bev and Paula but they hated driving away in their orange rental station-wagon-car-van more than anything else....
Last night (Thursday), Forrest and I headed to Hunt's Oyster Bar for my work Christmas shindig. Forrest ordered steamed oysters and the crab claw dinner....one glimpse of the snot-rockets on crackers with cocktail sauce and I was ready to run out the front door. I went with the salad bar, a few brews, and called it a night. We played "Dirty Santa" and walked away with a gift card to Burger King....Forrest can't wait for a free double whooper with fries.
Today is Friday and I'm off work; however, I have a thousand errands to get done. I won't bore you with those details but I will show you how I started off my morning.....
This is my spicy and healthier version of a breakfast casserole. In a ramekin, I put half of a whole wheat English muffin in the bottom. Next, I layered with Popeye leafers, Morning Star Hot and Spicy fake sausage (cook the sausage), pepper flakes, salt/pepper, and poured on the Southwestern Egg Beaters. I had plans to cook this casserole in the oven but I didn't have time (seriously, a long list of errands to do) so I microwaved this bad boy for about two/three minutes (as long as the eggs are cooked...you are good to go). Finally, I shredded Pepper jack cheese on top and broiled it in the oven for a few minutes to get the cheese ooey-gooey and slightly golden. I actually drenched this already spicy meal with Louisiana Hot Sauce right after I took this picture ;) Coffee and blogging rounded out this breakfast casserole brunch and was a delicious start to my busy day.
Our parental units will be here bright and squirrelly in the morning and we can't wait! Forrest is taking J Wayne, Dave, and Dave's dad to the Jackson hunting grounds for a dose of "man time" while we have breakfast and play with the new puppy. Yep, Sister and Dave will be proud parents of a standard poodle named Bill (Cosby) as of tonight!!! We can't wait to meet baby dog Bill and welcome him to his new home in Dothan!
